SUMMARY
The analysis and generalization of the results of information-analytical, experimental and clinical studies in terms of raw materials,
nutritional value, therapeutic and prophylactic properties, allergological and other risks of food use of wild rice grains have been carried out. It is
shown that wild rice is a traditional food plant for the North American continent. In the 21st century, it is used all over the world as a whole grain
source of biologically active substances and energy, which has a unique composition and ratio of macro- and micronutrients, as well as a dietary
product with a proven pharmacotherapeutic effect on the body. Prognostic allergological and other risks of food use of wild rice grains have also
been identified.
